A Breath of Health in The Old African Food
Fufu is synonymous to food in many African countries but barely has the ingredient changed from basic.Now MA Quality Foods based in Manchester has introduced an innovative new fufu powder [flour], It contains less carbohydrates and particularly appropriate for the health conscious. Called Sankofa Fufu, the idea was enhanced by the increasing consumer interest in the glycaemic index (GI) of their diet.Sankofa fufu incorporates a range of ingredients, including vegetable fibre, and inulin, a probiotic ingredient that offers many health benefits. It is fortified with soy protein derivative, a cholesterol-lowering ingredient. With the reduced carbohydrate and still incorporating the main traditional ingredients of plantain and cassava, the full-bodied texture is maintained using extrusion technology

A GAP in the market for high quality traditional African foods has been plugged by a small firm in Manchester.

Mensah, who has a degree in food science and technology from the University of Lincoln, had worked at top managerial positions for many UK and international food manufacturers, and was keen to start up on his own.
Now he is producing Sankofa fufu among other products, his own brand of traditional African Fu Fu - used to make a popular accompaniment for spicy stews and soups.
It is now supplied to shops and supermarkets throughout the UK, and Mensah has gone on to launch other products, and now plans a range of peanut soup pastes.
"Whilst working in food production, I appreciated the growing demand for high quality and healthy products.
